Cake! pt 2.

My first cake!

Not a good pic, and I haven't tasted it, but there it is...
350g Plain Flour
1/4 tsp Salt
300ml warm water
2 tblsp Balsamic vinegar
100g Cocoa
2 tsp Baking Powder
350g Castor Sugar
250ml Olive Oil
1 tblsp White Wine Vinegar
1. Grease a deep, 10" tin with butter and dust with cocoa (not that you plan to use). Preheat the over to Gas mark 4/160°c/350°f.
2. Sieve flour, cocoa, sugar, sugar and baking power into a bowl and mix thoroughly.
3. Mix the warm water and olive oil in a jug and pour into the bowl with the powdered ingredients, in a steady stream, mixing until you have a thick, dense batter. Stir in the vinegars and beat thoroughly.
4. Immediately pour the batter into the cake tin. Bake for 30-40 mins (mine took longer). The edges need to be firm, and the centre still damp. Turn off the over and leave in there for 10 minutes.
5. Leave to stand on the side for half an hour.
Dust with icing sugar and serve with figs and mascarpone, or ice with melted chocolate.
